1 loaf (16 ounces) thinly sliced white bread, crusts removed
1 package (8 ounces) cream cheese, softened
3/4 cup confectioners sugar
1 cup sugar
1-1/2 teaspoon ground cinnamon
3/4 cup butter, melted
Flatten bread with a rolling-pin. In a bowl, combine cream cheese and confectioners’ sugar. In another bowl, combine sugar and cinnamon; set aside. Spread about 1 tablespoon of cheese mixture on each slice of bread. Roll up, jelly roll style. Dip in melted butter, then in cinnamon-sugar. Place on an ungreased baking sheet. Bake at 350° for 20 minutes or until golden brown. Yield: 16 roll-ups. Good warm or cold. ADDICTING!
Last week Kirk was gone on another business trip which left me with 3 kids, stuck at home during a miserable heat wave (which was pretty odd for our area). I was feeling pretty far down. And tired. Alistaire has 8 teeth coming in, all at once, which yeah, has made for a “joyful” week (and it is till going on – they are his first molars!). He was (and is still) awake every couple of hours, every night, meaning I wasn’t functioning pretty hotly. Feeling sorry for myself all I craved was a big bowl o’ mac n’ cheese. Nothing vegan. I wanted it all, full octane. But with a twist….I adapted a recipe for cheese sauce I had seen on a box of corn starch…and ended up with the silkiest, smoothest cheese sauce ever. It was amazing tasting. A flour roux? Never again. From now on I am making it this way. No gritty, heavy texture. As in delicious and simple. And bonus? The sauce is gluten-free as well, so it can be paired over your favorite carb besides ol’ wheaty pasta.
No diet food here. I won’t lie: it had butter, milk, cheese, sour cream….yeah, basically a large cholesterol pit to wallow in. Some girls eat tubs of ice cream, not me. I just want carb heaven

Polytunnels are not pretty. The plastic sheeting glinting in the sun, rippling in the breeze on plastic hoops, does not blend easily into the earthy, natural delights of my garden. It’s an interloper, an alien, definitely unnatural and inorganic. It doesn’t belong!
Breakfast…everyone’s gripe. “I don’t have enough time.” “I’m just not hungry in the morning!” blah blah blah. Breakfast REALLY is the most important meal of the day. You wouldn’t drive your car on empty, so, why would you start your day without any fuel in your tank. Green smoothies, in my opinion, are one of the fastest, easiest, ways to pack a ton of nutrition into your day. On the contrary to popular belief, using the blender in the morning is not too time consuming.
I wake up around 4 am and have half a banana before my run and save the other half. When I come home and finish my workout, I prepare the smoothie before getting dressed for the day. I typically use 2 cups of spinach, 4 or 5 medium strawberries, 1/2 a banana, a quarter of an apple, 6 ounces of plain Greek yogurt, 1/2 a cup of skim milk, and a packet of “truvia”. You can throw in some oats or bran flakes for more fiber if, you like. I then put the smoothie into a large glass or my plastic “to-go” cup. Next, I soak the blender and consume the drink while I get ready and if I have to I finish it on the way to work. Before I run out the door I give the blender a good rinse and leave it to air dry and I am out the door! The smoothie has in it over 20 grams of protein, tons of fiber, and vitamins! It keeps me full for a long time and lets me have a lot of spinach without ever even tasting it! So, no excuses! Have breakfast and make it a nutritious one! Be happy. Be healthy. Be fit.!
